Description

Ingredients

  • 2 Tbsp extra-virgin olive oil
  • 1 cup diced yellow onion
  • 1 pint cherry tomatoes, halved
  • 8 oz pasta (whole wheat or chickpea pasta preferred)
  • 1 cup marinara sauce
  • 1 cup water
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • ½ cup heavy cream
  • 2 cups fresh spinach
  • ½ cup mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  • Heat the Olive Oil: In a large skillet, heat olive oil over medium heat. Add diced onion and cherry tomatoes. Cook for 7-8 minutes until the onion softens and tomatoes begin to break down.
  • Add the Pasta and Sauce: Stir in pasta, marinara sauce, water, garlic powder, oregano, salt, and pepper. Bring the mixture to a simmer, then cover and cook for 10-12 minutes, stirring occasionally, until the pasta is al dente.
  • Add the Cream and Cheese: Stir in the heavy cream, fresh spinach, mozzarella, and Parmesan cheese. Continue stirring until the spinach wilts and the cheese melts, about 2 minutes.
  • Garnish and Serve: Garnish with fresh basil and extra Parmesan cheese before serving.
