Ingredients
For the Feta Rolls:
- 8 oz feta cheese, crumbled

- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 tablespoon olive oil (for brushing)
- 6–8 sheets of phyllo dough (depending on size)
- Salt and pepper, to taste
- For the Chili Honey:
- 1/4 cup honey
- 1 tablespoon chili flakes (adjust to taste)
- 1 teaspoon apple cider vinegar (optional, for tang)
Instructions
- Prepare the chili honey: In a small saucepan, combine honey and chili flakes. Heat over low heat for 2-3 minutes, stirring occasionally. Optionally, add apple cider vinegar for tang. Remove from heat and set aside to cool.
- Prepare the feta filling: In a bowl, mix crumbled feta, ricotta cheese (if using), garlic powder, onion powder, and parsley. Season with salt and pepper.
- Assemble the rolls: Preheat oven to 375°F (190°C). Lay a sheet of phyllo dough on a clean surface, brush with olive oil, and layer another sheet on top, brushing again. Repeat for 3-4 sheets. Spoon about 2 tablespoons of the feta mixture along one edge and roll tightly into a cylinder, folding in the edges. Place seam-side down on a baking sheet.
- Bake the rolls: Brush the rolls with olive oil and bake for 15-20 minutes until golden brown and crispy.
- Serve: Drizzle the baked rolls with chili honey and garnish with extra parsley, if desired.
