Ingredients

  • 2 large eggs
  • 1/2 cup creamy peanut butter
  • 1/2 cup plain Greek yogurt (unsweetened)
  • 1 teaspoon pure vanilla extract
  • 2 cups quick oats
  • 1 scoop protein powder (unflavored or flavored)
  • 1/4 cup granulated sweetener (monk fruit, coconut sugar, brown sugar, etc.)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together the eggs, peanut butter, Greek yogurt, and vanilla extract until smooth and creamy.
