Ingredients
For the Chicken and Rice:
- 1 lb chicken breast, cubed
- 1 cup pineapple, cubed
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 cup jasmine rice
- 2 cups chicken broth
- 1 tablespoon soy sauce
- 1 teaspoon ginger, grated
- Salt and pepper to taste
For Garnish:
- ¼ cup green onions, sliced
- 1 tablespoon sesame seeds
Instructions
- Cook the Chicken: Heat olive oil in a large skillet over medium heat. Add cubed chicken and cook until golden brown and fully cooked. Remove and set aside.
- Sauté the Vegetables: In the same skillet, sauté onion, garlic, and red bell pepper until softened.
- Add Pineapple: Stir in the cubed pineapple and cook for about 2 minutes to release juices.
- Cook the Rice: Add jasmine rice, chicken broth, soy sauce, ginger, salt, and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until the rice is fully cooked.
- Combine Everything: Return the cooked chicken to the skillet and mix well. Let heat through for 2-3 minutes.
- Garnish and Serve: Sprinkle with green onions and sesame seeds before serving. Enjoy!
Notes
- For extra caramelization: Sauté the pineapple in a dry pan before adding to the dish.
- For best texture: Let the rice sit covered for 5 minutes after cooking before fluffing with a fork.
- One-pot option: Cook the chicken, then add veggies and rice directly to the same pan for easy cleanup.
