Ingredients

  • 1 pound chicken breast, cubed
  • 1 cup pineapple, cubed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon ginger, grated
  • Salt and pepper, to taste
  • ¼ cup green onions, sliced
  • 1 tablespoon sesame seeds

Instructions

  • Cook the Chicken – Heat olive oil in a large skillet over medium heat. Add chicken and cook until golden brown and fully cooked. Remove and set aside.
  • Sauté the Vegetables – In the same skillet, sauté onion, garlic, and red bell pepper until softened.
  • Add Pineapple – Stir in pineapple cubes and cook for 2 more minutes.
