Description

Roasted Carrots with Maple Orange is a simple yet elegant side dish featuring caramelized carrots coated in a sweet and tangy glaze made with maple syrup, fresh orange juice, and a hint of cinnamon. This easy and healthy recipe is perfect for holidays, family dinners, or meal prep.

Ingredients

  • 1 lb carrots, peeled and sliced
  • 2 tbsp olive oil
  • 2 tbsp maple syrup
  • 2 tbsp fresh orange juice
  • 1 tsp orange zest
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp ground cinnamon (optional)
  • Fresh parsley or thyme, for garnish

Instructions

  • Preheat the oven – Set your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Prepare the carrots – Peel and slice the carrots into uniform pieces for even roasting.
  • Make the glaze – In a small bowl, whisk together olive oil, maple syrup, fresh orange juice, orange zest, salt, pepper, and cinnamon (if using).
  • Coat the carrots – Toss the carrots with the glaze until evenly coated. Spread them in a single layer on the baking sheet.
  • Roast – Bake for 20-25 minutes, tossing halfway through, until tender and caramelized.
  • Garnish and serve – Sprinkle with fresh parsley or thyme before serving.

Notes

  • For extra caramelization, roast at 425°F (220°C) and avoid excess liquid.
  • For a nutty crunch, sprinkle toasted pecans or walnuts before serving.
  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days.
