Ingredients
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 carrot, peeled and diced
- 1 bell pepper, chopped
- 4 medium tomatoes, chopped (or 1 can of diced tomatoes)
- 3 cups frozen or fresh green peas
- 1 1/2 cups vegetable broth or water
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until softened and translucent, about 5-7 minutes.
- Add the minced garlic, diced carrot, and chopped bell pepper. Stir and cook for another 3-4 minutes, until the vegetables begin to soften.
- Stir in the chopped tomatoes (or canned diced tomatoes) and cook for 5 minutes, allowing the tomatoes to release their juices and become soft.
- Add the green peas to the pot, followed by the vegetable broth (or water), dried thyme, paprika, salt, and pepper. Stir well to combine.
- Bring the mixture to a boil, then reduce the heat to low and cover the pot. Simmer for 20-25 minutes, or until the peas are tender and the flavors are well combined.
- Taste and adjust the seasoning, adding more salt, pepper, or paprika if needed.
- Serve the stew hot, garnished with freshly chopped parsley.
Notes
- Storage: Store leftover stew in an airtight container in the refrigerator for up to 3 days.
- Freezing: The stew can be frozen for up to 2 months. Allow it to cool completely before transferring it to a freezer-safe container. Reheat it on the stovetop or in the microwave until warm.
- Reheating: Reheat leftovers on the stove over medium heat, adding a splash of water or broth if needed to loosen the stew. Alternatively, you can microwave individual portions for 2-3 minutes.
