- ½ cup diced red onion
- ½ cup diced bell pepper (red or green)
- 1 cup shredded cheddar cheese
- ½ cup salsa (mild or spicy)
- 1 tbsp taco seasoning
- ¼ cup fresh cilantro, chopped (optional)
- Salt & black pepper, to taste
- Tortilla chips or fresh veggie sticks, for serving
Instructions
- Prepare the Base: In a large mixing bowl, stir together cottage cheese and salsa until smooth.
- Add Veggies & Beans: Fold in black beans, corn, diced tomatoes, red onion, and bell pepper, mixing well.
