Ingredients
For the Chicken:
- 4 boneless, skinless chicken breasts or thighs
- Salt and pepper to taste
- 1 tbsp olive oil (for cooking)
For the Sauce:
- 4 scallions (green onions), chopped
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- ¼ cup soy sauce (low sodium recommended)
- 1 tbsp honey (or sugar)
- 1 tbsp rice vinegar or lemon juice
- 1 tsp sesame oil
- 1 tbsp olive oil (for cooking)
- Sesame seeds (optional, for garnish)
Instructions
- Prepare the Chicken – Season chicken breasts or thighs with salt and pepper.
- Cook the Chicken – In a skillet over medium heat, heat olive oil. Add chicken and cook for 5-7 minutes per side until golden brown and fully cooked. Remove from the skillet and set aside.
- Make the Sauce – In the same skillet, add a little more olive oil if needed. Sauté garlic and ginger for 1-2 minutes until fragrant. Add chopped scallions and cook for another minute.
- Combine – Add soy sauce, honey, and rice vinegar (or lemon juice) to the skillet. Stir to combine and let the sauce simmer for 2-3 minutes until it thickens slightly.
- Finish the Dish – Slice the cooked chicken and drizzle the scallion sauce over the top. Garnish with sesame seeds (optional).
- Serve – Serve hot with rice, noodles, or sautéed vegetables.
Notes
- Spicy Option – Add a pinch of red pepper flakes, fresh chili peppers, or a spoonful of sriracha for extra heat.
- Add Veggies – Stir-fry bell peppers, mushrooms, or snap peas along with the garlic and scallions for added texture and flavor.
- Grilled Scallion Chicken – Marinate the chicken in the sauce for 30 minutes before grilling for extra flavor.
- Citrus Twist – Add a squeeze of lime or orange juice for a zesty, refreshing finish.
- Sesame Scallion Chicken – Add toasted sesame seeds to the sauce or sprinkle them over the chicken for added crunch.
- Storage – Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheating – Reheat in a skillet over low heat, adding a splash of broth or sauce to refresh.
- Freezing – Freeze cooked chicken in sauce for 2-3 months. Thaw overnight before reheating.
