Description

Scallion Chicken is a quick, flavorful dish featuring tender chicken cooked with aromatic garlic, ginger, and fresh scallions. The savory and slightly sweet sauce adds a delicious twist, making it a perfect weeknight dinner. Serve with rice, noodles, or vegetables for a well-rounded meal.


Ingredients

For the Chicken:

  • 4 boneless, skinless chicken breasts or thighs
  • Salt and pepper to taste
  • 1 tbsp olive oil (for cooking)

For the Sauce:

  • 4 scallions (green onions), chopped
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • ¼ cup soy sauce (low sodium recommended)
  • 1 tbsp honey (or sugar)
  • 1 tbsp rice vinegar or lemon juice
  • 1 tsp sesame oil
  • 1 tbsp olive oil (for cooking)
  • Sesame seeds (optional, for garnish)

Instructions

  • Prepare the Chicken – Season chicken breasts or thighs with salt and pepper.
  • Cook the Chicken – In a skillet over medium heat, heat olive oil. Add chicken and cook for 5-7 minutes per side until golden brown and fully cooked. Remove from the skillet and set aside.
  • Make the Sauce – In the same skillet, add a little more olive oil if needed. Sauté garlic and ginger for 1-2 minutes until fragrant. Add chopped scallions and cook for another minute.
  • Combine – Add soy sauce, honey, and rice vinegar (or lemon juice) to the skillet. Stir to combine and let the sauce simmer for 2-3 minutes until it thickens slightly.
  • Finish the Dish – Slice the cooked chicken and drizzle the scallion sauce over the top. Garnish with sesame seeds (optional).
