Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup Greek plain yogurt
- 2 tablespoons dried oregano (or 2 tablespoons fresh oregano)
- 1 tablespoon lemon juice
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 3 garlic cloves, minced
- Kosher salt and pepper, to taste
- Toppings: Diced cucumbers, tomatoes, red onions, feta cheese, Kalamata olives, tzatziki sauce
Instructions
- In a large bowl, combine all ingredients except the toppings. Mix well and marinate the chicken in the fridge for 30 minutes to 24 hours.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the marinated chicken and cook for 3-4 minutes per side until the chicken is cooked through and no longer pink.
- Serve the chicken with toppings like cucumbers, tomatoes, red onions, feta, Kalamata olives, and tzatziki sauce. This dish can be served hot or cold, making it ideal for meal prep.
