Description

Skillet Greek Chicken is a healthy and flavorful dish where chicken breasts are marinated in a tangy yogurt-based marinade with Mediterranean spices, then cooked in a skillet to juicy perfection. With fresh Greek toppings like cucumbers, tomatoes, and feta cheese, it’s a simple and satisfying meal perfect for busy weeknights or meal prep.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup Greek plain yogurt
  • 2 tablespoons dried oregano (or 2 tablespoons fresh oregano)
  • 1 tablespoon lemon juice
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 3 garlic cloves, minced
  • Kosher salt and pepper, to taste
  • Toppings: Diced cucumbers, tomatoes, red onions, feta cheese, Kalamata olives, tzatziki sauce

Instructions

  • In a large bowl, combine all ingredients except the toppings. Mix well and marinate the chicken in the fridge for 30 minutes to 24 hours.
  • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the marinated chicken and cook for 3-4 minutes per side until the chicken is cooked through and no longer pink.
  • Serve the chicken with toppings like cucumbers, tomatoes, red onions, feta, Kalamata olives, and tzatziki sauce. This dish can be served hot or cold, making it ideal for meal prep.

Notes

  • Store leftovers separately in airtight containers for up to 3 days. Reheat the chicken in the microwave or on the stovetop.
