Ingredients
- 2 lbs boneless, skinless chicken breasts or thighs
- 2–3 chipotle peppers in adobo sauce (adjust for spice preference)
- ¼ cup honey
- 4 cloves garlic, minced
- 1 small onion, diced
- 2 tbsp tomato paste
- 2 tbsp fresh lime juice
- 1 tbsp apple cider vinegar
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1 tsp dried oregano
- Salt and black pepper, to taste
- 1 cup chicken broth
- Corn or flour tortillas
- Optional toppings: avocado, cilantro, diced onions, cotija cheese, lime wedges
Instructions
- Prepare the Chicken: Place chicken in the slow cooker and season with salt, pepper, cumin, smoked paprika, and oregano.
- Make the Sauce: In a bowl, mix chopped chipotle peppers, honey, minced garlic, diced onion, tomato paste, lime juice, apple cider vinegar, and chicken broth. Pour over the chicken.
- Slow Cook: Cover and cook on low for 6-7 hours or high for 3-4 hours until the chicken is tender and easily shredded.
