Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 23 chipotle peppers in adobo sauce (adjust for spice preference)
  • ¼ cup honey
  • 4 cloves garlic, minced
  • 1 small onion, diced
  • 2 tbsp tomato paste
  • 2 tbsp fresh lime juice
  • 1 tbsp apple cider vinegar
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • Salt and black pepper, to taste
  • 1 cup chicken broth
  • Corn or flour tortillas
  • Optional toppings: avocado, cilantro, diced onions, cotija cheese, lime wedges

Instructions

  1. Prepare the Chicken: Place chicken in the slow cooker and season with salt, pepper, cumin, smoked paprika, and oregano.
  2. Make the Sauce: In a bowl, mix chopped chipotle peppers, honey, minced garlic, diced onion, tomato paste, lime juice, apple cider vinegar, and chicken broth. Pour over the chicken.
  3. Slow Cook: Cover and cook on low for 6-7 hours or high for 3-4 hours until the chicken is tender and easily shredded.
  4. Shred the Chicken: Remove the chicken from the slow cooker and shred it with two forks. Return it to the sauce and mix well.
