Ingredients
For the Smash Burgers:
- 1 lb ground beef (preferably 80/20)
- Salt and pepper, to taste
- 4 hamburger buns
- Butter (for toasting buns)
For the Baconnaise Sauce:
- 1/2 cup mayonnaise
- 1/4 cup cooked bacon, finely chopped
- 1 tablespoon bacon grease (optional)
- 1 teaspoon Dijon mustard
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and pepper, to taste
Instructions
- Make the Baconnaise Sauce: In a small bowl, combine mayonnaise, chopped bacon, bacon grease (if using), Dijon mustard, garlic powder, smoked paprika, salt, and pepper. Stir until well combined and set aside.
- Form the Burger Patties: Divide the ground beef into 4 equal portions (about 4 ounces each). Roll into balls, but don’t press them flat just yet.
- Cook the Burgers: Heat a cast-iron skillet or heavy griddle over medium-high heat. Once hot, place the beef balls in the skillet and immediately smash them down using a spatula or burger press. Cook for 2-3 minutes until edges are crispy and browned. Flip, season with salt and pepper, and cook for another 1-2 minutes.
- Toast the Buns: Butter the hamburger buns and toast them in the same skillet until golden brown.
- Assemble the Smash Burgers: Spread a generous amount of baconnaise sauce on the bottom of each toasted bun. Place the cooked patty on top and close with the other half of the bun.
- Serve: Serve immediately with fries, chips, or a fresh salad.
