Description

Ingredients

  • 1 pound smoked sausage, sliced into rounds

  • 1 1/2 pounds baby potatoes, halved or quartered

  • 12 ounces green beans, trimmed

  • 2 tablespoons olive oil

  • 1 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon smoked paprika

  • Salt and black pepper to taste

  • Fresh parsley for garnish (optional)


Instructions

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.

  • In a large bowl, toss the halved potatoes with 1 tablespoon olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Spread the potatoes on the baking sheet and roast for 20 minutes.

  • While the potatoes are roasting, slice the sausage and trim the green beans.

  • After 20 minutes, remove the baking sheet from the oven and add the sausage and green beans. Drizzle with the remaining tablespoon of olive oil, then toss everything to combine.

  • Return the baking sheet to the oven and roast for an additional 20-25 minutes until the potatoes are tender and golden, the green beans are crisp-tender, and the sausage is caramelized.

  • Garnish with fresh parsley, if desired, and serve hot.


Notes

  • You can swap frozen green beans for fresh—just be sure to thaw and dry them first to avoid excess moisture.

  • For extra flavor, try adding bell peppers, onions, or carrots to the mix.

  • Sweet potatoes make a great substitution for baby potatoes for a slightly sweet twist.
