Description

This Smoky Jalapeño Popper Meatloaf is a bold and flavorful twist on classic meatloaf. Packed with cheddar cheese, cream cheese, and smoky spices, this juicy meatloaf delivers a cheesy, spicy kick in every bite. Topped with BBQ sauce, extra cheese, and a creamy ranch drizzle, it’s perfect for those who love heat and comfort food combined!

Ingredients

  • 1 ½ lbs ground beef (80/20 for best flavor)
  • 1 cup breadcrumbs (panko or regular)
  • 1 egg
  • ½ cup milk
  • 1 small onion, finely diced
  • 2 jalapeños, diced (seeds removed for less heat)
  • 1 cup shredded cheddar cheese
  • 4 oz cream cheese, softened
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • Salt and black pepper to taste

For the Topping:

  • ¼ cup BBQ sauce
  • ¼ cup shredded cheddar cheese
  • 2 jalapeño slices (for garnish, optional)

For the Creamy Ranch Drizzle:

  • ½ cup ranch dressing
  • 2 tablespoons sour cream
  • 1 teaspoon smoked paprika (optional, for extra smoky flavor)

Instructions

Step 1: Preheat the Oven

Preheat your oven to 375°F (190°C) and lightly grease a loaf pan or baking sheet.

Step 2: Prepare the Meatloaf Mixture

  1. In a large bowl, mix together ground beef, breadcrumbs, egg, milk, diced onion, jalapeños, cheddar cheese, cream cheese, smoked paprika, garlic powder, salt, and black pepper.
  2. Stir until just combined—avoid overmixing to keep the meatloaf tender.
  3. Shape the mixture into a loaf shape and place it in the prepared pan or on a baking sheet.

Step 3: Add the Topping

  1. Spread BBQ sauce evenly over the top of the meatloaf.
  2. Sprinkle with extra shredded cheddar cheese.
  3. Add jalapeño slices for garnish if desired.

Step 4: Bake the Meatloaf

  1. Bake for 50-60 minutes, or until the internal temperature reaches 160°F (71°C).
  2. Let the meatloaf rest for 5-10 minutes before slicing to lock in the juices.

Step 5: Make the Creamy Ranch Drizzle

  1. In a small bowl, whisk together ranch dressing, sour cream, and smoked paprika until smooth.

Step 6: Serve & Garnish

  1. Drizzle the creamy ranch sauce over each slice before serving.
  2. Serve with mashed potatoes, roasted vegetables, or a crisp side salad.

Notes

  • Use 80/20 Ground Beef – The perfect fat-to-lean ratio keeps the meatloaf juicy and flavorful without being greasy.
  • Don’t Overmix – Stir ingredients until just combined to avoid a dense, tough meatloaf.
  • Adjust the Spice Level – Remove jalapeño seeds for a milder taste, or keep them in for extra heat.
  • For Extra Creaminess – Soften cream cheese before mixing for even distribution.
  • Let It Rest – Allow the meatloaf to rest for 5-10 minutes after baking to retain moisture before slicing.
  • Crispier Top Option – Broil for the last 3-5 minutes to caramelize the BBQ sauce and cheese topping.
  • Make It Low-Carb – Swap breadcrumbs with crushed pork rinds or almond flour for a keto-friendly version.
  • Bacon Lovers’ UpgradeWrap the meatloaf in bacon before baking for an even smokier flavor.
  • Meal Prep Friendly – Make ahead and store in individual slices for easy reheating throughout the week.
  • Best Side Dishes – Pair with garlic mashed potatoes, roasted vegetables, or a crisp green salad for a well-balanced meal.
