Ingredients

  • 2 large chicken breasts, cut into 1-inch pieces
  • ½ cup cottage cheese (full-fat recommended)
  • ¼ cup chopped fresh spinach
  • ½ cup artichoke hearts, drained and chopped
  • 2 cloves garlic, minced
  • ¼ cup grated Parmesan cheese
  • ¼ cup olive oil
  • Salt & pepper, to taste

Instructions

1️⃣ Preheat & Prepare Chicken:

  • Preheat oven to 400°F (200°C).
  • Cut chicken breasts into 1-inch pieces and place them in a large mixing bowl.

2️⃣ Mix Ingredients:

  • Add cottage cheese, spinach, artichoke hearts, garlic, Parmesan cheese, olive oil, salt, and pepper to the bowl.
  • Stir until everything is evenly combined.

3️⃣ Bake:

  • Spread the mixture evenly in a 9×13-inch baking pan.
