Ingredients
- 2 cups fresh spinach, washed, dried, and chopped
- 1 cup crumbled feta cheese
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- 2 eggs
- ¾ cup milk
- ¼ cup olive oil
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- Prepare the spinach by chopping it into small pieces.
- Mix dry ingredients – In a large bowl, whisk together flour, baking powder, and salt.
- Combine wet ingredients – In another bowl, beat the eggs, then mix in the milk and olive oil.
- Fold in spinach and feta to the wet mixture, stirring gently.
- Incorporate dry ingredients into the wet mixture, stirring until just combined.
- Transfer the batter into the greased loaf pan and smooth the top.
- Bake for 40–50 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
- Add garlic, herbs, or sun-dried tomatoes for extra flavor.
- Store at room temperature for 2 days, in the fridge for 5 days, or freeze for up to 3 months.
- To reheat, warm slices in the oven at 300°F (150°C) or toast them for extra crispiness.
