Description

Spinach Feta Bread is a savory, moist, and flavorful bread that combines the earthy taste of spinach with the tangy richness of feta cheese. Perfect as a side dish, snack, or even a light meal, this easy-to-make bread pairs well with soups, salads, or just a pat of butter.


Ingredients

  • 2 cups fresh spinach, washed, dried, and chopped
  • 1 cup crumbled feta cheese
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 2 eggs
  • ¾ cup milk
  • ¼ cup olive oil

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. Prepare the spinach by chopping it into small pieces.
  3. Mix dry ingredients – In a large bowl, whisk together flour, baking powder, and salt.
  4. Combine wet ingredients – In another bowl, beat the eggs, then mix in the milk and olive oil.
  5. Fold in spinach and feta to the wet mixture, stirring gently.
  6. Incorporate dry ingredients into the wet mixture, stirring until just combined.
  7. Transfer the batter into the greased loaf pan and smooth the top.
  8. Bake for 40–50 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • Add garlic, herbs, or sun-dried tomatoes for extra flavor.
  • Store at room temperature for 2 days, in the fridge for 5 days, or freeze for up to 3 months.
  • To reheat, warm slices in the oven at 300°F (150°C) or toast them for extra crispiness.
