Ingredients
For the Cookie Dough:
- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 1 stick unsalted butter, softened
- ½ cup granulated sugar
- ½ cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- ½ cup freeze-dried strawberries, crushed (or fresh chopped strawberries)
For the Cheesecake Filling:
- 8 oz cream cheese, softened
- ¼ cup powdered sugar
- ½ teaspoon vanilla extract
- 1 tablespoon sour cream (optional for tanginess)
Instructions
- Prepare the Cookie Dough: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. In a small bowl, whisk together flour, baking soda, and salt. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract. Gradually mix in the dry ingredients and stir until just combined. Gently fold in the crushed freeze-dried strawberries (or chopped fresh strawberries).
- Make the Cheesecake Filling: In a bowl, beat together the cream cheese, powdered sugar, vanilla, and sour cream (if using) until smooth and creamy.
- Form the Cookies: Scoop about 1 tablespoon of cookie dough and flatten it slightly with your fingers. Place a small spoonful of the cheesecake filling in the center, then add another tablespoon of cookie dough to cover the filling. Pinch the edges together to seal the filling inside.
- Bake the Cookies: Place the stuffed cookies on the prepared baking sheet and bake for 10-12 minutes or until the edges are golden brown. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- Serve: Enjoy your soft, chewy strawberry cheesecake cookies with a cold glass of milk!
Notes
- Chocolate Chip Strawberry Cheesecake Cookies: Add chocolate chips to the dough for a more decadent treat.
- Use Fresh Strawberries: If using fresh strawberries, finely chop them and pat them dry to reduce moisture in the dough.
- Dairy-Free: Substitute cream cheese and butter with dairy-free alternatives.
