Ingredients
- 1 cup mashed sweet potatoes (roasted or boiled)
- 1 ¾ cups all-purpose flour
- ½ cup brown sugar
- ½ cup granulated sugar
- 1 tsp baking powder
- ½ tsp baking soda
- 1 tsp cinnamon
- ½ tsp nutmeg
- ½ tsp salt
- 2 eggs
- ½ cup vegetable oil (or melted butter)
- 1 tsp vanilla extract
- ¼ cup milk (or buttermilk)
- Optional Mix-ins: ½ cup chopped pecans, walnuts, or chocolate chips
Instructions
- Preheat Oven: Set the oven to 350°F (175°C) and grease a loaf pan.
- Mix Wet Ingredients: In a large bowl, whisk together mashed sweet potatoes, eggs, oil, vanilla extract, and both sugars until smooth.
- Prepare Dry Ingredients: In a separate bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Combine: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in nuts or chocolate chips if using.
- Bake: Pour batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Cool & Serve: Let the bread cool in the pan for 10 minutes before transferring to a wire rack. Slice and enjoy!
