Description

Sweet Potato Bread is a moist, spiced quick bread made with mashed sweet potatoes, cinnamon, and vanilla. Perfect for breakfast, snacks, or dessert, this easy homemade loaf is soft, flavorful, and can be customized with nuts or chocolate chips for extra indulgence.

Ingredients

  • 1 cup mashed sweet potatoes (roasted or boiled)
  • 1 ¾ cups all-purpose flour
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp salt
  • 2 eggs
  • ½ cup vegetable oil (or melted butter)
  • 1 tsp vanilla extract
  • ¼ cup milk (or buttermilk)
  • Optional Mix-ins: ½ cup chopped pecans, walnuts, or chocolate chips

Instructions

  • Preheat Oven: Set the oven to 350°F (175°C) and grease a loaf pan.
  • Mix Wet Ingredients: In a large bowl, whisk together mashed sweet potatoes, eggs, oil, vanilla extract, and both sugars until smooth.
  • Prepare Dry Ingredients: In a separate bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • Combine: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in nuts or chocolate chips if using.
  • Bake: Pour batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool & Serve: Let the bread cool in the pan for 10 minutes before transferring to a wire rack. Slice and enjoy!

Notes

  • Sweet Potato Prep: Roast or boil sweet potatoes until soft, then mash until smooth.
  • Oil Substitute: Use unsweetened applesauce for a lighter version.
  • Make It Gluten-Free: Replace all-purpose flour with a 1:1 gluten-free flour blend.
  • Extra Flavor: Add a pinch of cloves or allspice for more warmth.
  • Storage Tips:
    • Room Temperature: Store in an airtight container for up to 3 days.
    • Refrigeration: Keeps fresh for up to 5 days.
    • Freezing: Wrap in plastic wrap and foil, then freeze for up to 3 months.
  • Reheating: Warm slices in the microwave for 10-15 seconds or toast for a crispier texture.
  • Serving Ideas: Enjoy with butter, honey, or cream cheese for a delicious treat.
