Ingredients
- 8 oz fresh mushrooms, sliced
- 2 tbsp butter
- 1/4 tsp garlic powder
- 1/4 tsp thyme
- Salt and pepper, to taste
- 4 slices of bread (sourdough or whole wheat)
- 4 slices Swiss cheese
- 1 tbsp mayonnaise (optional)
Instructions
- In a large skillet, melt 1 tbsp of butter over medium heat. Add sliced mushrooms and sauté for 5-7 minutes, stirring occasionally, until softened and golden brown.
- Stir in garlic powder, thyme, salt, and pepper, and cook for another 1-2 minutes. Remove from heat and set aside.
- Heat a separate skillet or griddle over medium heat, adding a small amount of butter.
- Butter one side of each slice of bread. Spread mayonnaise (optional) on the unbuttered side of two slices, and top with a slice of Swiss cheese.
- Evenly distribute sautéed mushrooms on top of the cheese and add the remaining slices of Swiss cheese.
- Place the remaining slices of bread on top, with buttered sides facing out.
- Grill the sandwiches for 3-4 minutes per side until golden brown and the cheese is melted.
- Slice and serve immediately.
