Ingredients

- 2 medium sweet potatoes, diced

- 1 tsp cumin
- Salt and pepper, to taste
- 2 cups spinach, chopped
- Fresh parsley, for garnish
Instructions
- Cook Aromatics: Heat olive oil in a large skillet over medium heat. Add chopped onion and minced garlic. Cook for 2-3 minutes until the onion becomes translucent.
