Description

This Ultimate Loaded Beef Burrito is packed with seasoned beef, rice, beans, cheese, and fresh toppings for a satisfying, flavor-packed meal. Perfect for meal prep, quick dinners, or on-the-go lunches, this burrito is easy to make and endlessly customizable.

Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning (or homemade blend)
  • ½ cup water
  • 1 cup cooked rice (white, brown, or Mexican-style)
  • 1 cup black beans (drained and rinsed)
  • 1 cup shredded cheddar or Mexican cheese blend
  • ½ cup salsa or pico de gallo
  • ½ cup sour cream
  • 1 avocado, sliced (or guacamole)
  • ½ cup shredded lettuce
  • ½ cup diced tomatoes
  • 4 large flour tortillas

Instructions

  • Cook the Beef – In a skillet over medium heat, cook the ground beef until browned. Drain excess fat, then add taco seasoning and water. Simmer for 5 minutes until the beef is evenly coated.
  • Prepare the Fillings – Warm up the rice and beans. Shred the cheese and chop fresh toppings like lettuce, tomatoes, and avocado.
  • Assemble the Burritos – Lay a tortilla flat and add a portion of beef, rice, beans, cheese, salsa, and sour cream. Top with lettuce, tomatoes, and avocado slices.
  • Wrap the Burrito – Fold in the sides of the tortilla, then roll it up tightly from the bottom.
  • Toast the Burrito (Optional) – Heat a skillet over medium heat and toast the burrito for 1-2 minutes per side until golden and crispy.
  • Serve – Slice in half and enjoy with extra salsa, guacamole, or hot sauce.

Notes

  • Spicy Version: Add jalapeños, hot sauce, or chipotle mayo for extra heat.
  • Vegetarian Option: Swap the beef for sautéed mushrooms, tofu, or extra beans.
  • Low-Carb Version: Use a low-carb tortilla or serve as a burrito bowl over lettuce instead.
  • Extra Crunch: Add crushed tortilla chips inside for a crispy texture.
  • Cheesy Melt: Sprinkle extra cheese on top and bake for a melty, cheesy finish.
