Description

Baked Feta Chickpeas is a simple, Mediterranean-inspired dish that combines crispy roasted chickpeas with creamy feta and fragrant herbs. This quick and easy recipe is perfect for a light lunch, snack, or side dish. Ready in just 30 minutes, it’s packed with flavor and nutrition, offering a healthy, satisfying, and versatile option for any meal.

Ingredients

  • Canned Chickpeas (drained and rinsed)

    • 2 cans (15 oz each) canned chickpeas, drained and rinsed
  • Feta Cheese (block or crumbled)

    • 1/2 cup feta cheese (block or crumbled)
  • Olive Oil

    • 2 tablespoons olive oil
  • Dried Oregano

    • 1 teaspoon dried oregano
  • Garlic Powder

    • 1 teaspoon garlic powder
  • Paprika

    • 1 teaspoon paprika
  • Salt and Pepper

    • 1/2 teaspoon salt (adjust to taste)
    • 1/4 teaspoon freshly ground black pepper (adjust to taste)
  • Fresh Parsley (optional, for garnish)

    • 2 tablespoons fresh parsley, chopped
  • Lemon Wedges (optional, for serving)

    • 2 lemon wedges, for serving

Instructions

  • Preheat the oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

  • Prepare the chickpeas:

    • Drain and rinse the canned chickpeas. Pat them dry with a paper towel to remove excess moisture.
    • Spread the chickpeas out on the prepared baking sheet in a single layer.
  • Season the chickpeas:

    • Drizzle the olive oil over the chickpeas.
    • Sprinkle with garlic powder, paprika, dried oregano, salt, and pepper. Toss well to coat the chickpeas evenly.
  • Add feta:

    • Crumble the feta cheese (if using a block) or scatter crumbled feta over the chickpeas.
  • Bake:

    • Roast in the preheated oven for 20-25 minutes, stirring halfway through. The chickpeas should be golden and crispy, and the feta should be soft and melted.
  • Serve:

    • Garnish with fresh parsley and serve with lemon wedges for a tangy finish.
    • Serve warm as a snack, side dish, or topping for salads and bowls.

Notes

  • For extra heat: Add red pepper flakes or cayenne pepper for a spicy kick.
  • Vegetable add-ins: Toss in some cherry tomatoes, olives, or red onion before baking for extra flavor and color.
  • Vegan option: Swap feta for dairy-free feta or another plant-based cheese to make this dish vegan.
  • Make ahead: You can prepare the chickpeas and feta ahead of time, but it’s best to bake them just before serving for the crispiest results.
