Description

Broccoli Cheese Stuffed Chicken Breast is a healthy and indulgent dish that pairs tender chicken with a creamy, cheesy broccoli filling. This simple and flavorful recipe is perfect for a comforting weeknight dinner, meal prep, or impressing guests. It’s a balanced, kid-friendly meal with protein and veggies all in one bite!

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups fresh broccoli florets, steamed and chopped
  • 4 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Olive oil or butter (for searing)
  • 1 tsp Italian seasoning (optional)
  • Toothpicks (to secure the chicken)

Instructions

  • Prepare the Chicken – Slice each chicken breast horizontally to create a pocket, being careful not to cut all the way through.
  • Make the Filling – In a bowl, mix together the steamed and chopped broccoli, cream cheese, shredded cheddar cheese, garlic powder, salt, and pepper until well combined.
  • Stuff the Chicken – Spoon the broccoli cheese mixture into the pocket of each chicken breast. Secure with toothpicks if needed to hold the filling inside.
  • Sear the Chicken – Heat olive oil or butter in a large oven-safe skillet over medium-high heat. Sear the chicken breasts for 3-4 minutes on each side until golden brown.
  • Bake the Chicken – Preheat your oven to 375°F (190°C). Once seared, transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F.
  • Serve – Let the chicken rest for a few minutes before serving. Enjoy with your favorite side dishes!

Notes

  • Different Cheese: Swap out cheddar for mozzarella, Swiss, or even pepper jack for a twist.
  • Add Bacon: For extra flavor, crumble cooked bacon into the filling mixture.
  • Add Spices: Italian seasoning, paprika, or red pepper flakes can add extra flavor to the filling.
  • Low-Carb Version: Pair the stuffed chicken with cauliflower rice or other low-carb vegetables instead of traditional sides.
