Ingredients
- 4 boneless, skinless chicken breasts
- 2 cups fresh broccoli florets, steamed and chopped
- 4 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 1 tsp garlic powder
- Salt and pepper to taste
- Olive oil or butter (for searing)
- 1 tsp Italian seasoning (optional)
- Toothpicks (to secure the chicken)
Instructions
- Prepare the Chicken – Slice each chicken breast horizontally to create a pocket, being careful not to cut all the way through.
- Make the Filling – In a bowl, mix together the steamed and chopped broccoli, cream cheese, shredded cheddar cheese, garlic powder, salt, and pepper until well combined.
- Stuff the Chicken – Spoon the broccoli cheese mixture into the pocket of each chicken breast. Secure with toothpicks if needed to hold the filling inside.
- Sear the Chicken – Heat olive oil or butter in a large oven-safe skillet over medium-high heat. Sear the chicken breasts for 3-4 minutes on each side until golden brown.
- Bake the Chicken – Preheat your oven to 375°F (190°C). Once seared, transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F.
- Serve – Let the chicken rest for a few minutes before serving. Enjoy with your favorite side dishes!
Notes
- Different Cheese: Swap out cheddar for mozzarella, Swiss, or even pepper jack for a twist.
- Add Bacon: For extra flavor, crumble cooked bacon into the filling mixture.
- Add Spices: Italian seasoning, paprika, or red pepper flakes can add extra flavor to the filling.
- Low-Carb Version: Pair the stuffed chicken with cauliflower rice or other low-carb vegetables instead of traditional sides.
