Ingredients
- 1 lb Italian sausage (mild or spicy)
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 3 cups water
- 3 medium potatoes, sliced or diced
- 1 cup heavy cream
- 3 cups kale, chopped (or spinach as a substitute)
- 1/2 teaspoon salt (or to taste)
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional, for spice)
- 1/2 cup grated Parmesan cheese (for serving)
Instructions
- In a large pot or Dutch oven, cook the Italian sausage over medium heat, breaking it up into crumbles. Drain excess grease if necessary.
- Add the diced onion and cook until softened, about 3 minutes. Stir in the minced garlic and cook for another minute until fragrant.
- Pour in the chicken broth and water, then add the potatoes. Bring to a boil and let simmer for about 15 minutes, or until the potatoes are tender.
- Reduce the heat to low, stir in the heavy cream, and add the chopped kale. Simmer for another 5 minutes until the kale is wilted.
- Season with salt, black pepper, and red pepper flakes (if using).
- Serve hot, garnished with grated Parmesan cheese.
