Description

Ingredients

  • 1 lb Italian sausage (mild or spicy)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 3 cups water
  • 3 medium potatoes, sliced or diced
  • 1 cup heavy cream
  • 3 cups kale, chopped (or spinach as a substitute)
  • 1/2 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional, for spice)
  • 1/2 cup grated Parmesan cheese (for serving)

Instructions

  1. In a large pot or Dutch oven, cook the Italian sausage over medium heat, breaking it up into crumbles. Drain excess grease if necessary.
  2. Add the diced onion and cook until softened, about 3 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  3. Pour in the chicken broth and water, then add the potatoes. Bring to a boil and let simmer for about 15 minutes, or until the potatoes are tender.
  4. Reduce the heat to low, stir in the heavy cream, and add the chopped kale. Simmer for another 5 minutes until the kale is wilted.
  5. Season with salt, black pepper, and red pepper flakes (if using).
  6. Serve hot, garnished with grated Parmesan cheese.
